Cheesy Beef Noodle Casserole
Step 1: Brown the Beef
In a skillet over medium-low heat, brown one pound of ground beef and remove excess grease.
Step 2: Add Vegetables
Add half a large chopped onion and 1/3 cup of finely diced carrots to the skillet. Stir until onions are translucent.
Step 3: Add Garlic and Tomatoes
Make a well in the mixture and add two large minced garlic cloves and one cup of diced tomatoes. Cook for about one minute.
Step 4: Season the Mixture
Add one teaspoon of onion powder, one teaspoon of paprika, 4 oz of tomato sauce, and one cup of beef broth. Season with parsley, pepper, and a little salt. Let it cook uncovered for about 7 minutes.
Step 5: Cook the Noodles
In a separate pot, cook 8 oz of extra wide egg noodles according to package directions for al dente.
Step 6: Combine Ingredients
In a large bowl, combine the cooked noodles, the beef mixture, one cup of small curd cottage cheese, one cup of sour cream, chopped parsley, and pepper. Toss together.
Step 7: Assemble the Casserole
Preheat the oven to 350°F. Spray a 9x11 baking dish with non-stick spray. Layer half of the noodle mixture, followed by half of the meat mixture, then the remaining noodles, and top with the remaining meat mixture.
Step 8: Add Cheese and Bake
Spread one cup of freshly grated sharp cheddar cheese on top. Cover with aluminum foil and bake for 25-30 minutes. Remove foil after 20 minutes to allow the cheese to brown.
Step 9: Cool and Serve
Let the casserole cool for about 5 minutes before cutting. Serve with a salad and crusty bread.
