Cooking steps
Chicken & Chorizo One Pan Rice
Step 1: Fry onion and chorizo
- Heat a pan and fry 1 diced onion and 140g diced chorizo until the onion softens and chorizo is slightly browned.
Step 2: Add garlic
- Add 3 crushed garlic cloves and fry for 30 seconds.
Step 3: Cook chicken with spices
- Add 400g diced chicken breast along with 1 tbsp garlic granules and 1 tbsp smoked paprika.
- Cook until the chicken has some color all over.
Step 4: Add tomato puree
- Stir in 2 tbsp tomato puree to coat the chicken well.
Step 5: Add rice and stock
- Add 260g uncooked rice and stir for about a minute.
- Pour in 700ml stock and bring to a boil.
Step 6: Simmer
- Once boiling, reduce heat to low, cover the pan, and cook for 15 to 20 minutes.
- Stir occasionally to prevent sticking.
Step 7: Finish with parsley and cheese
- When rice is cooked, stir through some parsley.
- Scatter 80g reduced fat grated cheese on top.
- Cover the pan again to allow the cheese to melt.
Step 8: Serve
- Serve hot, optionally with broccoli on the side.
