Beef Tartare Recipe

Step 1: Prepare the Beef [00:49]

  • Dry off the beef tenderloin and remove any sinew or silver skin.
  • Place the beef in the freezer for a short time to firm it up.

  • Finely chop one small shallot (or half of a larger one).
  • Slice cornichons into tiny pieces.
  • Chop fresh parsley finely.

  • Freeze a baguette or ciabatta roll until hard.
  • Slice it thinly and place on a parchment-lined sheet tray.
  • Drizzle with oil and sprinkle with salt, then bake at 200°C until crispy.

  • Slice the beef thinly, then chop until minced.
