Beef Tartare Recipe
Step 1: Prepare the Beef
- Dry off the beef tenderloin and remove any sinew or silver skin.
- Place the beef in the freezer for a short time to firm it up.
Step 2: Chop the Ingredients
- Finely chop one small shallot (or half of a larger one).
- Slice cornichons into tiny pieces.
- Chop fresh parsley finely.
Step 3: Prepare the Croutons
- Freeze a baguette or ciabatta roll until hard.
- Slice it thinly and place on a parchment-lined sheet tray.
- Drizzle with oil and sprinkle with salt, then bake at 200°C until crispy.
Step 4: Mince the Beef
- Remove the beef from the freezer and dry it off.
- Slice the beef thinly, then chop until minced.
Step 5: Mix the Ingredients
- In a chilled bowl, combine minced beef, chopped shallot, cornichons, parsley, 50g ketchup, 1 tablespoon Dijon mustard, 15ml Worcestershire sauce, a few drops of Tabasco, black pepper, and salt.
- Mix well and taste for seasoning.
Step 6: Prepare the Garnish
- Slice endives and radish for garnish, seasoning with salt and olive oil.
- Optionally, add chives or microgreens.
Step 7: Plate the Dish
- Carefully open a quail egg and place it on top of the tartare for garnish.
- Serve immediately and enjoy!
