Step 1: Prepare the Base
- In a large sauté pan, melt butter and olive oil over medium heat.
Step 2: Add Onion
- Finely chop the sweet onion (optional) and add it to the pan.
- Cook for 3–4 minutes, stirring occasionally.
Step 3: Add Garlic
- Grate or finely mince garlic cloves and add them to the pan.
- Sauté for another 30 seconds to 1 minute until fragrant.
Step 4: Cook Ground Beef
- Add ground beef to the skillet and season with salt and black pepper.
- Break the beef into small pieces and cook for 4 minutes until browned.
Step 5: Add Broth and Potatoes
- Add bay leaf and sweet paprika.
- Pour in beef stock and bring to a simmer.
- Slice small potatoes into rounds and add them to the pan, stirring gently.
- Cover with a lid and cook over low heat for about 10 minutes.
Step 6: Finish the Sauce
- Remove the lid and stir in sour cream, Dijon mustard, and fresh parsley.
- Let it simmer uncovered for another 2-3 minutes, adjusting seasoning if needed.
Step 7: Prepare Meatballs
- In a bowl, mix ground beef, ground pork, eggs, salt, all spice, black pepper, ground nutmeg, grated onion, garlic, and white sandwich bread (crust removed).
- Add milk and mix well by hand.

- Use an ice cream scoop or tablespoon to form uniform meatballs.
Step 9: Fry Meatballs
- Heat oil in a pan over medium heat and fry meatballs in batches for about 4 minutes until browned.
Step 10: Make Gravy
- In the same pan, add butter and flour, cooking for 1 minute while stirring.
- Gradually add beef broth while stirring, then add the meatballs and their juices.
- Simmer for about 7 minutes.
Step 11: Finish the Dish
- Add heavy cream and simmer for another 5 minutes.
