Step 1: Prepare Chicken
- Season skin-on chicken thighs with salt and pepper on both sides.
- Place chicken skin-side down in a cold pan.
- Cook until the skin is golden brown, then flip.
- Remove chicken from pan once browned.
Step 2: Make Sauce Base
- In the same pan, add olive oil and butter.
- Sauté onions and garlic until translucent.
Step 3: Add Flavorings
- Stir in tomato paste and gochujang.
- Cook until the mixture turns a deep red color.
Step 4: Deglaze and Simmer
