Step 1: Prepare the Broth and Vegetables
- In a pot, combine 4 cups low-sodium chicken broth, a pinch of salt, 1/2 medium onion, 1 carrot stick (halved), 1 celery stalk (halved), and 4 cloves garlic (to taste).
- Bring to a boil, then cover and simmer over medium-low heat for about 20 minutes until the vegetables are tender.
Step 2: Blend the Vegetables
- Transfer the cooked vegetables to a blender.
- Add 1/2 to 1 teaspoon turmeric (optional for color) and a little bit of the broth.
- Blend until smooth.
Step 3: Combine and Season
- Add the blended vegetable mixture back into the broth.
- Add another pinch of salt and 1 tablespoon butter.
- Stir to combine.
Step 4: Cook the Pastina
- Pour in 1 cup pastina (or any small pasta).
- Simmer uncovered for about 8 minutes, stirring occasionally, until the pasta is al dente.
Step 5: Finish with Egg Yolk
- Once the pasta is cooked, turn off the heat.
- Stir in 1 egg yolk (optional) immediately.
Step 6: Final Seasoning
- Taste the soup and adjust seasoning as needed.
- Add grated garlic (1 clove, to taste) and a squeeze of fresh lemon juice (about 1/2 lemon).
Step 7: Serve
- Serve warm with freshly grated Parmesan cheese, freshly cracked black pepper, and a drizzle of extra virgin olive oil.
- Optionally, add another touch of butter if desired.
