Pistachio Cheesecake

Step 1: Prepare the Crust

  • Combine ground cookies, sugar, and melted butter in a bowl. Mix well and press into the bottom of a baking pan.

  • In a separate bowl, mix cream cheese, cheese, eggs, cornstarch, and pistachio cream. Use a mixer but avoid overmixing.

Step 3: Bake the Cheesecake

Step 5: Prepare the Ganache

  • Melt white chocolate, heavy cream, and pistachio cream together over medium heat. Allow it to cool, then refrigerate overnight.

Step 6: Finish the Cheesecake

  • Before applying the ganache to the cheesecake, soften it with a mixer. Spread the ganache over the cheesecake before serving.
