Gajar ka Halwa Recipe
Step 1: Heat Ghee
Heat five tablespoons of ghee in a pan.
Step 2: Sauté Carrots
Add a kilo of grated carrots to the pan and sauté for a few minutes until they turn a beautiful orange color.
Step 3: Add Milk
Pour in a liter of full fat milk with cream and cook the carrots in the milk, stirring occasionally for about 30-40 minutes until the milk reduces.
Step 4: Add Sugar
Once the milk has reduced, add ten tablespoons of sugar (approximately 3/4 of a cup) to the mixture.
Step 5: Add Dry Fruits
Incorporate soaked and chopped dry fruits: almonds, cashew nuts, raisins, and pistachios.
Step 6: Add Cardamom
Sprinkle in a teaspoon of green cardamom powder and continue to cook until the halwa is moist and gooey.
Step 7: Check Consistency
Ensure the halwa is ready when the milk is completely reduced and the fat appears around the halwa.
Step 8: Serve
Once ready, shut the flame and serve the Gajar ka Halwa in a beautiful way.
