Cooking steps
Best Ever Tiramisu
Step 1: Prepare Coffee Mixture
- Boil 300 ml water.
- Add coffee and 2 tablespoons of coffee essence.
- Stir until dissolved and pour into a shallow dish to cool.
Step 2: Prepare Cream Mixture
- In a bowl, add 400 ml double cream (heavy cream).
- Add 250 g mascarpone cheese in small bits.
- Add 5 tablespoons castor sugar.
- Add 75 ml marsala.
- Whisk the mixture until it reaches soft peaks and a smooth, ridged consistency.
Step 3: Dip Sponge Fingers
- Dip 175 g sponge fingers briefly into the cooled coffee mixture.
- Do not soak too long to avoid sogginess.
- Arrange dipped fingers in a shallow dish with the sugar side up.
Step 4: Assemble the First Layer
- Place the dipped sponge fingers in the dish.
- Spread half of the cream mixture evenly over the sponge fingers.
Step 5: Assemble the Second Layer
- Repeat dipping sponge fingers in coffee and layering over the cream.
- Use a second pack of sponge fingers if needed to fill the dish.
- Spread the remaining cream mixture over the second layer.
Step 6: Refrigerate
- Cover the assembled tiramisu with cling film.
- Refrigerate for a few hours or overnight to set.
Step 7: Garnish and Serve
- Grate 25 g dark chocolate over the top.
- Sprinkle 2 teaspoons cocoa powder evenly on top.
- Serve chilled.
