  • Boil 300 ml water.
  • Add coffee and 2 tablespoons of coffee essence.
  • Stir until dissolved and pour into a shallow dish to cool.

Step 2: Prepare Cream Mixture [03:00]

  • In a bowl, add 400 ml double cream (heavy cream).
  • Add 250 g mascarpone cheese in small bits.
  • Add 5 tablespoons castor sugar.
  • Add 75 ml marsala.
  • Whisk the mixture until it reaches soft peaks and a smooth, ridged consistency.

Step 3: Dip Sponge Fingers [05:29]

  • Dip 175 g sponge fingers briefly into the cooled coffee mixture.
  • Do not soak too long to avoid sogginess.
  • Arrange dipped fingers in a shallow dish with the sugar side up.

  • Place the dipped sponge fingers in the dish.
  • Spread half of the cream mixture evenly over the sponge fingers.

  • Repeat dipping sponge fingers in coffee and layering over the cream.

  • Spread the remaining cream mixture over the second layer.
