Chicken Curry Recipe
Step 1: Prepare the Chicken
- Heat a little oil in a pan over high heat.
- Add the seasoned diced chicken breasts.
- Cook for about 2 minutes without moving to seal one side.
- Turn over and cook the other side for about 2 minutes to seal it as well.
- Remove the chicken from the pan and set aside.
Step 2: Make the Base Sauce
- In the same pan, add a little more oil and warm over low heat.
- Add well-chopped garlic cloves and very chopped onion.
- Season and stir occasionally with a wooden spoon.
- Cook gently for about 15 minutes until the onion is soft and translucent, avoiding frying.
Step 3: Add Tomato and Curry
- Add 2 or 3 tablespoons of crushed tomato to the pan.
- Add 1 to 3 tablespoons of curry powder depending on your taste preference.
- Mix well and cook for about 15 minutes more.
Step 4: Combine Chicken and Cream
- Return the sealed chicken to the pan.
- Add whipping cream with 15% fat content.
- Mix all ingredients over medium heat carefully to avoid burning the cream.
- The sauce will gradually turn yellow from the curry.
- Add a pinch of salt and mix again.

- Let the curry cook for about 15 minutes on very low heat.
- This allows the sauce to thicken, the chicken to finish cooking, and flavors to meld.
