Compow Chicken Recipe
Step 1: Prepare aromatics and vegetables
- Mince garlic finely (use garlic press if available).
- Mince 5 slices of ginger by cutting into fine strips then across the strips.
- Chop 4 green onions (stem part only) into small pieces.
- Cut 1 zucchini by removing the stem, slicing lengthwise into 4 strips, then dice into large pieces.
Step 2: Marinate the chicken
- Cut chicken breast or thigh into bite-size pieces.
- Marinate with soy sauce, sugar, white pepper powder, corn starch, a little baking soda, rice wine, and some water.
- Mix well and add a little oil.
Step 3: Stir-fry zucchini
- Heat oil in a pan over medium-high heat.
- Stir-fry zucchini briefly until coated with oil.
- Season with a pinch of salt and sugar, stir to combine.
- Add a splash of rice wine (or water if you don’t use wine).
- Stir-fry until the rice wine cooks off, then remove zucchini from the pan.
Step 4: Stir-fry aromatics and spices
- Add more oil to the pan.
- Stir-fry minced garlic, green onion, and ginger until fragrant.
- Add dry whole chili and chili flakes, stir-fry for 10 seconds.
Step 5: Cook the chicken
- Add marinated chicken to the pan.
- Spread chicken out and let it pan-fry undisturbed until the bottom is golden.
- Stir and continue pan-frying, repeating until chicken is about 50% cooked.
- Add rice wine and stir-fry until it cooks off.
Step 6: Add sauces and seasonings
- Add soy sauce, dark soy sauce, sugar, paprika, and rice vinegar.
- Stir-fry until the color is even.
Step 7: Finish the sauce and combine
- Add water to the pan and bring to a boil.
- Let the sauce thicken slightly.
- Add the cooked zucchini and toasted peanuts.
- Add a touch of white pepper powder.
- Toss everything together well.
Step 8: Serve and enjoy
- The dish is ready with tender chicken, flavorful sauce, crunchy peanuts, and mildly spicy heat.
