Cooking steps

Garlic Mozzarella Puffs Recipe

Step 1: Preheat the oven

Preheat your oven to 180°C.

Step 2: Prepare the filling

In a bowl, mix 200g grated mozzarella, 3 crushed garlic cloves, 1/2 tsp oregano, salt, and pepper.

Step 3: Prepare the pastry

Lay out 1 sheet of puff pastry. Sprinkle the mozzarella mixture evenly over the pastry.

Step 4: Add pancetta (optional)

If using, break up 100g raw pancetta or bacon into small pieces and sprinkle over the mozzarella mixture.

Step 5: Cut the pastry

Slice the pastry lengthwise down the middle, then slice widthwise into strips about 1-1.5 cm wide, creating 2 strips per row. You should have between 30-36 strips.

Step 6: Roll and flatten

Press down the edges of each strip, then roll them up. Once rolled, press them down well to flatten. This helps the puffs to rise and flake instead of spreading.

Step 7: Egg wash

Brush each puff with the beaten egg for a golden finish.

Step 8: Bake

Place the puffs on a baking tray and bake for 14-20 minutes, keeping an eye on them as they cook quickly.

Step 9: Prepare garlic oil

Mix 1 garlic clove (minced), chopped parsley, 20-30ml olive oil, salt, and pepper.

Step 10: Finish

As soon as the puffs come out of the oven, brush them with the garlic oil mixture.
