Glazed Sweet Potato Loaded Taco Bowls Meal Prep
Step 1: Prepare Sweet Potatoes
- Pierce 4 medium sweet potatoes with a fork.
- Microwave 3 tbsp butter, 2 tbsp brown sugar, and 1 tsp cinnamon until melted.
- Brush the mixture over the sweet potatoes.
- Bake sweet potatoes at 350°F in oven-safe meal prep containers for 1 hour.
Step 2: Cook Taco Beef
- Heat 1 tbsp olive oil in a pan.
- Sauté 1 medium diced onion on low heat for 2-3 minutes until soft.
- Add 2 lb 90% lean ground bison and cook.
- Season with salt, pepper, and 2 tbsp taco BLAST seasoning.
- Add 2 tbsp tomato paste and cook for a few minutes until combined.
- Stir in 8 minced garlic cloves.
- Add 1/2 cup water and 1 tsp hot honey (optional) to balance flavors.
- Cook until mixture thickens and looks well combined.
Step 3: Assemble Taco Bowls
- Fill each baked sweet potato with the cooked taco beef mixture.
- Top with 1/4 cup freshly grated Monterrey Jack cheese.

- In a bowl, mash 2 large avocados.
