Step 1: Prepare Sweet Potatoes

  • Pierce 4 medium sweet potatoes with a fork.
  • Microwave 3 tbsp butter, 2 tbsp brown sugar, and 1 tsp cinnamon until melted.
  • Brush the mixture over the sweet potatoes.
  • Bake sweet potatoes at 350°F in oven-safe meal prep containers for 1 hour.

Step 2: Cook Taco Beef

  • Heat 1 tbsp olive oil in a pan.
  • Sauté 1 medium diced onion on low heat for 2-3 minutes until soft.
  • Add 2 lb 90% lean ground bison and cook.
  • Season with salt, pepper, and 2 tbsp taco BLAST seasoning.
