Churros with Chocolate Sauce
Step 1: Prepare the Dough
Grab a glass of water and pour it into your favorite pot. Add sugar and half a teaspoon of salt. Stir well to dissolve.
Step 2: Melt Butter
Add some butter (chopped into small cubes if desired) to the pot and heat on medium until melted, about a minute. Stir to mix.
Step 3: Add Flour
Once the butter and water are boiling, add 1 cup of flour and 2 extra tablespoons. Stir vigorously to avoid lumps until it forms a smooth ball.
Step 4: Cool the Dough
Transfer the dough to a clean bowl and let it cool for 5 minutes to prevent curdling when adding eggs.
Step 5: Prepare the Eggs
Whisk one egg in a bowl. Gradually add it to the dough, mixing well. For the second egg, crack it directly into the dough and mix immediately.
Step 6: Adjust Dough Consistency
Add half of the beaten egg to the dough and mix. If the dough is still too thick, add the rest of the first egg and mix until smooth and shiny.
Step 7: Chill the Dough
Cover the dough with cling film and refrigerate for a bit.
Step 8: Make Chocolate Sauce
Mix cornstarch with 2 tablespoons of water and set aside. Chop less than 2 ounces of dark chocolate and place it in a saucepan.
Step 9: Combine Ingredients for Sauce
Add sugar and half a cup of milk to the chocolate. Heat on low, stirring occasionally until melted and smooth.
Step 10: Thicken the Sauce
Add the cornstarch mixture to the chocolate and cook for 1-2 minutes until thickened.
Step 11: Fry the Churros
Pour vegetable oil into a frying pan and heat for 3-4 minutes. Transfer the dough into a piping bag or a makeshift plastic bag.
Step 12: Pipe and Fry
Squeeze the dough onto baking paper or directly into the pan. Fry until golden and crispy, about 2 minutes per side.
Step 13: Serve
Remove churros from the oil and let them drain. Serve immediately with the chocolate sauce.
