Step-by-step Instructions

  1. Mix 3 egg yolks with a pinch of salt and 120 g sugar.
  2. Add 150 g sour butter and 130 g cream to the mixture.
  3. Incorporate 400 g flour and a pinch of baking soda into the mix.
  4. Refrigerate the dough for 1 hour.
  5. Beat 3 egg whites with 150 g sugar until fluffy.
  6. Chop 250 g walnuts.
  7. Divide 80 g ghee into 8 equal parts.
  8. Grease a baking dish with one part of the ghee.
  9. Layer the dough and walnuts alternately, greasing each layer with melted butter.
  10. Mix 1 tsp milk with an egg yolk and brush over the top layer.
  11. Bake at 160°C (320°F) for 40-45 minutes.
  12. Prepare syrup by simmering 100 g sugar, 40 g honey, and 100 ml water for 5-7 minutes.
  13. Pour hot syrup over the baked cake.
  14. Bake again at 200°C (392°F) briefly.
  15. Cool the cake for 10 minutes before serving.
