Late Night Souped-Up Ramen

Step 1: Prep the ingredients [00:09]

Boil water in a pot. Slice the sausage into thin pieces and dice the onion.

Step 2: Sauté the aromatics [00:34]

In a wok, cook the sausage. Add the diced onion and sauté. Using a mortar and pestle, crush some Sichuan peppercorns and add them to the wok. Also, add the garlic and some dried red chili peppers.

Step 3: Season the base [01:34]

Add a pinch of salt and a bit of oil to the wok to help the flavors infuse.

Step 4: Cook the egg [02:11]

Add an egg to the boiling water in the pot.

Step 5: Finalize the aromatics [02:34]

Dice the red chili peppers and add them to the wok. Then, finely chop the green onions.

Step 6: Cook the noodles [03:13]

Add the noodles to the boiling water and cook them.

Step 7: Assemble the bowl [03:41]

In a serving bowl, add the ramen seasoning packet. Pour some of the hot noodle water into the bowl to dissolve the seasoning. Add the two slices of cheese to the bowl.

Step 8: Final assembly [04:25]

Transfer the cooked noodles into the bowl with the broth and cheese. Carefully add the cooked egg, top with the sautéed sausage and aromatics from the wok, and garnish with chopped green onions and crispy fried garlic.
