Step 1: Prepare the chicken breasts

  • Season 2 chicken breasts (180g each) with chicken seasoning, salt, pepper, and paprika.
  • Cut a pocket into each chicken breast.

Step 2: Stuff the chicken

  • Stuff the pockets with 20g low fat pesto, chopped tomatoes, and 60g reduced fat mozzarella.

Step 3: Cook the chicken

  • Bake the stuffed chicken breasts in an air fryer at 180°C for 20 minutes.

Step 4: Prepare the mash

  • Peel and boil 300g potatoes until soft.
  • Drain and whisk the potatoes with 10g butter and 50ml milk until smooth and creamy.
  • Season the mash well with salt and pepper.
