Chocolate Cheesecake Recipe
Step 1: Prepare the Oreo crust
- Remove cream from 14 Oreos.
- Crush Oreos into small pieces, but not powder, using a bag and smashing or blender.
- Mix in 40g melted unsalted butter (cooled).
- Press the mixture lightly into a 15cm detachable mold.
- Chill in the fridge.
Step 2: Melt the chocolate
- Break 200g of 55% dark chocolate into small pieces.
- Melt using a double boiler or microwave.
- Let the melted chocolate cool down.
Step 3: Prepare cream cheese mixture
- Whisk 300g room temperature cream cheese until smooth.
- Add 1 tsp vanilla extract and 40g sugar; whisk again until sugar dissolves.
- Mix in the cooled melted chocolate thoroughly.
Step 4: Whip the cream
- Whisk 200g whipping cream to soft peaks (80-90%).
- Be careful not to overwhip to avoid separation.
Step 5: Combine cream and chocolate mixture
- Gently fold the whipped cream into the chocolate-cream cheese mixture using a spatula.
- Use folding technique to keep batter smooth and avoid separation.
Step 6: Assemble and chill
- Pour the cream cheese mixture over the chilled Oreo crust.
- Chill the cake in the fridge for about 4 hours.
Step 7: Prepare chocolate glaze (optional)
- Heat 100g whipping cream to a soft boil.
- Place 100g dark chocolate in a cup.
- Pour hot cream over chocolate and stir until melted.
- Let glaze cool until not hot but not fully set.
Step 8: Unmold and glaze the cake
- Use a warm towel to loosen the cake from the mold by patting around the rim.
- Remove the cake carefully.
- Pour the cooled chocolate glaze over the cake.
Step 9: Serve and enjoy
- The cake is soft, dense, and delicious.
