Step 1: Prepare the Ingredients
- Thinly slice two medium onions. For more texture, slice them thicker, but thinner slices will release flavor faster.
- Thinly slice three green onions, separating the whites and greens.
- Cut one pound of thinly sliced beef into bite-sized pieces.
Step 2: Make the Sauce
- In a small container, combine:
- 1.5 cups of water
- 6 tablespoons of soy sauce
- 6 tablespoons of mirin
- 1 tablespoon of sugar
- 1 teaspoon of hondashi
- Mix well. For a non-alcoholic version, use 1.75 cups of water, 6 tablespoons of soy sauce, 1.5 tablespoons of sugar, and 1.5 teaspoons of hondashi.
Step 3: Cook the Onions
- Pour the sauce into a large pot and add the sliced onions and the white parts of the green onions. Bring to a boil.
- Once boiling, reduce heat to medium and let simmer for about 2 minutes until onions are translucent.
Step 4: Add the Beef
- Add the sliced beef to the pot, gently separating any pieces that are sticking together. Mix well to coat the beef in the sauce.
- Cover with a lid and let simmer for about 5 minutes until the beef is tender. If not tender enough, add a splash of water and simmer longer.
Step 5: Plate the Dish
- Serve rice in a bowl, then place the beef and onions over the rice. Use chopsticks or tongs to avoid too much broth.
- Add 1-2 tablespoons of the broth to the dish.
Step 6: Garnish and Serve
- Top with pickled ginger and green onions. Optionally, add a soft-boiled egg, sunny side up, or poached egg for creaminess.
