Cooking steps

Beef and Snow Pea Stir Fry

Step 1: Prepare aromatics and vegetables [00:31-01:00]

  • Slice 4 pieces of ginger.
  • Mince 4 cloves of garlic.
  • Prepare the snow peas by snapping off the tips and pulling down the edge if needed.

Step 2: Prepare the beef [01:00-01:36]

  • Slice the chai tip roast beef across the muscle fibers for tenderness.
  • Marinate the beef with soy sauce, oyster sauce, dark soy sauce, a little sugar, baking soda, water, corn starch, and crushed black pepper.
  • Mix well and add a touch of oil.
  • Let marinate for about 10 minutes.

Step 3: Prepare corn starch slurry [01:44-01:55]

  • Mix corn starch with cold water until no clumps remain.

Step 4: Cook snow peas [02:01-02:59]

  • Heat oil in a pan over medium-high heat.
  • Add ginger slices and let them sizzle briefly.
  • Add a little salt and then the snow peas.
  • Stir fry for about 30 seconds.
  • Add a splash of rice wine (optional) and stir fry for 15 seconds to evaporate alcohol.
  • Add some water and stir fry for another 30 seconds.
  • Remove snow peas from pan.
  • Wipe the pan clean to avoid splattering.

  • Add oil to the pan and heat.
  • Add the marinated beef, spreading it out.
  • Let it pan fry briefly until the bottom turns golden.
  • Add minced garlic and let it sizzle briefly.
  • Add oyster sauce and dark soy sauce.
  • Stir fry until beef color is even.
  • Stir the corn starch slurry and add it to the pan.
  • Mix evenly; the sauce will thicken quickly.

Step 6: Combine and finish [04:08-04:16]

  • Add the cooked snow peas back to the pan.
  • Mix snow peas and beef together.
  • Serve hot, ideally with rice.
