Cooking steps
Chicken and Cabbage Stir Fry
Step 1: Prepare Ingredients
- Finely mince 4 cloves of garlic.
- Prepare 4 slices of ginger.
- Cut 2 green onions into 2 inch sections, keeping stem and leafy parts separate.
- Cut cabbage into 2 inch thick slices and separate the layers of leaves.
- Cut chicken breast or thigh into slices.
Step 2: Marinate Chicken
- In a bowl, combine chicken slices with soy sauce, dark soy sauce, water, a little sugar, white pepper powder, a little baking soda, and some corn starch.
- Mix evenly.
- Add a touch of sesame oil and mix again.
Step 3: Prepare Corn Starch Mixture
- Mix corn starch with cold water until dissolved.
Step 4: Stir Fry Cabbage
- Heat oil in a pan over medium-high heat.
- When hot, add a tiny bit of sugar and salt to the oil.
- Immediately add cabbage and stir fry for about 1 minute.
- Add a touch of rice wine and stir fry for another 30 seconds.
- If not using rice wine, stir fry cabbage for a total of 1.5 minutes.
- Remove cabbage from the pan.
Step 5: Cook Chicken
- Add more oil to the pan if needed.
- Add ginger slices and let them sizzle briefly.
- Add chicken slices, spread out and pan fry until the bottom is golden.
- Add the stem part of green onion and minced garlic.
- Stir fry until chicken is about 70% cooked.
Step 6: Add Flavorings
- Add a touch of rice wine to chicken and toss to let alcohol evaporate.
- Once steam has evaporated, season with more soy sauce and dark soy sauce.
- Continue stir frying until chicken color is even.
Step 7: Add Sauce
- Stir the corn starch and water mixture again to avoid settling.
- Add the mixture to the pan.
- Let it boil and thicken into a sauce.
Step 8: Combine and Finish
- Add the cooked cabbage back to the pan.
- Add the leafy part of the green onion.
- Toss everything quickly to mix and coat with sauce.
