Slice the onion from the root and then from the top. Gently peel the onion and slice it into rings.

Place the onion rings in a bowl and cover with buttermilk. Add a splash of hot sauce, garlic powder, smoked paprika, and chipotle chili powder. Mix gently without breaking the rings.

In a separate bowl, combine all-purpose flour with 30-40% cornstarch, garlic powder, smoked paprika, and chipotle chili powder.
