Black Bean Brownies Recipe
Step 1: Prepare the Flax Egg
- Mix 1 tablespoon flax meal with 3 tablespoons water.
- Let it thicken for a couple of minutes.
Step 2: Blend the Batter
- Add to a food processor:
- 1 can of rinsed black beans
- 1/2 cup almond butter
- 1/4 cup almond flour
- 1/4 cup cocoa powder
- prepared flax egg
- 1/2 cup maple syrup
- vanilla extract (to taste)
- baking powder (to taste)
- baking soda (to taste)
- Pulse until completely smooth with no chunks.
Step 3: Add Chocolate Chips
- Add 3/4 cup chocolate chips or chopped chocolate.
- Pulse a few times to mix evenly.
Step 4: Prepare the Baking Pan
- Spray an 8x8 inch non-stick square pan with avocado oil.
- Pour the batter into the pan.
- Tap the pan on the counter a few times to even out the batter.
- Sprinkle extra mini chocolate chips on top.
Step 5: Bake
- Bake at 350°F (175°C) for 23 to 25 minutes.
