Making the 2 Minute Mayo

Step 1: Combine ingredients [00:09]

Add one egg (whole), 1/2 lemon juice, 1/2 yuzu juice, a touch of Dijon mustard, one garlic clove, and a sprinkle of Japanese shichimi togarashi into a blending container.

Step 2: Add oil [01:00]

Pour 3/4 cup of canola oil into the mixture.

Step 3: Blend [01:26]

Place an immersion blender at the bottom of the container. Blend, keeping it at the bottom, and as the mayonnaise starts to emulsify, slowly tilt the head of the blender and gradually pull it up to incorporate all the oil.

Step 4: Final touches [02:00]

Transfer the mixture to a bowl and whisk in a splash of extra virgin olive oil for flavor. Season to taste with salt and MSG.
