1 rack of lamb

Prepare the Sauce
- Crush 6-8 garlic cloves with a knife, then mince them finely and transfer them to a mixing bowl.
- Strip the leaves off the stems of fresh thyme and fresh rosemary. Take approximately 1.5 tablespoons of each herb, chop them roughly, and add them to the bowl with the garlic.
- Add 1 tablespoon of whole grain mustard, 1 tablespoon of Dijon mustard, 1 tablespoon of maple syrup, 3-4 tablespoons of extra virgin olive oil, a pinch of ground black pepper, and 2 teaspoons of salt to the bowl.
- Mix all ingredients thoroughly to create the sauce.
Prepare the Lamb
- Trim excess fat from the top of the rack of lamb if necessary.
- Flip the lamb over and use a sharp knife to cut through the rack between the bones to create individual chops.
Season and Broil
- Arrange the lamb chops in a roasting pan.
- Evenly spread the prepared sauce onto both sides of each lamb chop.
- Preheat the oven to a high broil setting.
- Once the broiler is ready, place the pan in the oven and broil for 8-10 minutes, or until the lamb develops a nice golden-brown color.
Bake and Serve
- Switch the oven back to the 'Bake' setting and set the temperature to 425°F.
