Preparation
- Add the coriander leaves, mint leaves, green chillies, garlic, ginger, and fried onions to a food processor and pulse until finely chopped.
- Add the diced chicken breast pieces, salt, pepper, a little bit of garam masala powder, turmeric powder, red chilli powder, and a squeeze of lemon juice to the mixture.
- Pulse the food processor again until you get a smooth paste.
- (Optional) Fry a small piece of the mixture to taste for seasoning adjustments before shaping the rest.
Shaping and Cooking
- Take portions of the chicken mixture and shape them into kebabs (like cylinders or patties).
- For cheese-stuffed kebabs, flatten a portion of the mixture, place a small piece of cheese in the center, and fold the mixture over it, sealing all edges well to ensure the cheese doesn't ooze out.
- (Optional) Crumb-coat the shaped kebabs for a crispier texture.
- Heat a pan with oil and cook the kebabs on both sides until done.
Note: If you plan to freeze the kebabs, shape them first and then place them in the freezer. It is not recommended to freeze the entire batch of mixture as it will be difficult to shape after defrosting.
