Easy Strawberry Tiramisu

Step 1: Prepare the Strawberry Puree [01:19]

Place 4 cups of chopped strawberries in a food processor and blend until completely smooth with no remaining chunks.

Step 2: Prepare the Cream Filling [02:08]

In a large bowl, cream the 16 oz of softened cream cheese with a mixer until smooth and lump-free. Add 3 cups of powdered sugar, 2 teaspoons of vanilla extract, and some lemon zest. Mix until combined. Gradually add 3 cups of cold heavy whipping cream, mixing with a whisk attachment until stiff peaks form. Finally, fold in 1 cup of crushed strawberries.

Step 3: Assemble the Tiramisu [04:47]

Dip ladyfinger cookies in the strawberry puree and layer them in a trifle bowl. Spread a generous amount of the cream filling over the cookies and sprinkle with a layer of diced strawberries. Repeat the layers of ladyfingers, cream, and diced strawberries until the bowl is filled.

Step 4: Garnish and Chill [06:38]

Sprinkle freeze-dried strawberry powder through a fine-mesh strainer over the top of the tiramisu. Optionally, garnish the edges with sliced fresh strawberries. Let the tiramisu sit in the fridge for a couple of hours or overnight for the best results.
