Main

750g lean beef mince
6 large white wraps
180g cheddar cheese

Vegetables

1 brown onion

Seasonings and Condiments

1 tbsp tomato paste
2 tsp smoked paprika
2 tsp garlic powder
1/2 tsp chili flakes
3/4 cup (180ml) beef stock
80g high protein yogurt
1/4 cup (60g) tomato ketchup
1 tsp (10g) yellow mustard
1 pickle (100g/3.5oz)

Pasos

Preparation

Step 1: Prep vegetables [00:11]

Dice the onion into small pieces. Slice the pickle into thin strips, then chop into small pieces.

Step 2: Grate cheese [00:55]

Grate the 180g of cheddar cheese.

Cooking

Step 3: Cook the base [01:21]

Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the diced onion with salt and pepper. Cook for 3-4 minutes until translucent. Add 20g of tomato paste and cook for 1 minute.

Step 4: Brown the meat [02:01]

Add the 750g of lean beef mince to the pan. Season with salt and pepper, and cook for 6-8 minutes until browned, breaking it up and ensuring moisture evaporates. Add 2 teaspoons each of smoked paprika and garlic powder, plus 1/2 teaspoon of chili flakes. Cook for 1 minute.

Step 5: Deglaze and finish [03:17]

Add 180ml of beef stock and cook for 2-4 minutes until slightly reduced. Turn off the heat and stir in 80g of high protein yogurt, 60g of tomato ketchup, 10g of yellow mustard, and the chopped pickle.

Assembly

Step 6: Assemble and fold [04:17]

Divide the mixture into 6 portions. Spread one portion in the center of a flour tortilla, top with 1/6th of the grated cheese, and add a little more salt, pepper, and desired sauce (like Cajun mayonnaise). Fold the sides of the tortilla in, then fold over and roll tightly.

Step 7: Toast [05:20]

Heat a pan over medium heat. Toast each wrap seam-side down until golden brown on all sides.
