Braising the Meat
- Salt and Sear: Generously salt the chosen braising cut. Heat oil in a dutch oven and sear the meat on all sides until browned.
- Braise: Add beef broth (or water) to the pot, enough to cover the bottom well. Bring to a simmer on the stove.
- Cook: Cover the dutch oven and transfer to a preheated 300°F (150°C) oven. Cook for 5 to 7 hours until tender.
- Shred: Remove the meat from the pot and shred it using two forks. Store the shredded beef and the remaining broth separately in containers for later use.
Weeknight Meal Ideas
1. Braised Beef Banh Mi
- Heat a portion of the shredded beef in a pan. Add a squirt of sriracha, a squirt of hoisin, and a few shakes of Maggi seasoning. Heat until the beef is crispy.
- Assemble on a baguette: spread kewpie mayo on both sides, add cucumber slices, the crispy beef, fresh cilantro, and pickled carrots.
2. Beef Tinga Tostada
- Sauce: Blend 1/2 can of tomatoes, 2 cloves of garlic, a spoonful of chipotles in adobo, 1/4 onion, a sprinkle of dried oregano, and a large pinch of salt.
- Cook: Sauté a bay leaf in oil, add the blended sauce and simmer for 5 minutes. Stir in the shredded beef and cook for another 10 minutes.
- Assemble: Spread greek yogurt or sour cream on a tostada. Add the beef mixture, diced red onion, sliced avocado, cotija cheese, cilantro, and a squeeze of lime.
3. Crispy Beef Pasta
- Crispy Beef Topping: Mince garlic and rosemary. Sauté in a pan with oil, then add some shredded beef. Spread thinly to crisp up.
- Sauce: Simmer the other half of the canned tomatoes with 2 tablespoons butter, 1/4 of an onion, and a sprinkle of salt for 30 minutes.
- Assemble: Toss boiled pappardelle pasta with the tomato sauce. Plate and top with the crispy beef, grated Parmigiano-Reggiano, and fresh rosemary.
