  1. Place dried shiitake mushrooms in boiling water and cook for about 20 minutes over low heat.
  2. In a frying pan, fry the minced meat.
  3. Season the meat with soy sauce, smoked paprika, and honey or mirin. Caramelize the meat over low heat, then set it aside.

Step 2: Prepare the Tare (Soup Base) [00:26]

  1. In a jar, combine miso paste, peanut butter, sesame oil or olive oil, soy sauce, rice vinegar, and a little mushroom broth.
  2. Blend the ingredients until smooth using an immersion blender.

Step 3: Prepare the Eggs [00:02]

  1. Marinate the cooked eggs in a mixture of soy sauce and other seasonings (as shown in the video).

Step 4: Assemble the Ramen [00:39]

  1. Pour the prepared tare into a pot and mix it with the mushroom broth.
  2. Place the cooked noodles (ramen, soba, or udon) in a bowl.
  3. Pour the hot broth over the noodles.
  4. Top the ramen with the sliced shiitake mushrooms, caramelized minced meat, freshly chopped chives, and the marinated egg.
  5. Serve immediately with extra spices and sesame seeds if desired.
