Lemon Loaf Cake
Step 1: Prepare the lemon
Boil 1 meyer's lemon for about 5 minutes until the peel is soft. Remove the seeds and chop the lemon into pieces.
Step 2: Combine base ingredients
In a bowl, combine the chopped lemon, 3/4 cup sugar, 3 eggs, 1/4 cup vegetable oil, and milk.
Step 3: Blend and add dry ingredients
Use a hand blender to process the mixture. Add 1 3/4 cup flour and 10 grams of baking powder. Blend again until smooth.
Step 4: Bake
Pour the batter into a loaf pan lined with parchment paper. Bake at 320 degrees for about an hour.
Step 5: Finish with glaze
Mix powdered sugar and lemon juice to create a glaze. Pour it over the cooled loaf and garnish with lemon zest.
