Soya Kheema Pav Recipe

Step 1: Prepare the Soya [00:16]

Add 150g of soya granules to a pot of boiling water with a pinch of salt. Cook for 1-2 minutes, then strain and rinse with fresh water. Squeeze out all excess moisture.

Step 2: Sauté the aromatics [00:41]

In a hot pan, melt 2 tbsp of ghee with 1 tsp of oil. Add the cumin, bay leaf, cinnamon stick, star anise, cardamom, cloves, and black peppercorns. Sauté for a minute until aromatic.

Step 3: Cook the base [00:56]

Add 4-5 chopped onions and cook until golden brown. Stir in 2 tbsp ginger garlic paste and 2 tsp chopped green chillies; sauté for another minute.

Step 4: Add tomatoes [01:11]

Add 3-4 chopped tomatoes and salt to taste. Cook until they are mushy and the ghee begins to separate.

Step 5: Incorporate spices [01:23]

Stir in 1 tbsp red chilli powder, 1 tbsp coriander powder, 1 tsp cumin powder, and 1/4 tsp turmeric powder. Cook well until the ghee separates again. Add a little hot water to keep the masalas from burning.

Step 6: Combine [01:42]

Mix in the prepared boiled soya granules. Cook on medium-high heat. Add 150ml of hot water and cook on medium-low heat for 25-30 minutes, stirring and adding hot water 2-3 more times to achieve the perfect texture and flavor.

Step 7: Finish and serve [02:18]

Once the ghee separates, garnish with slit green chillies, julienned ginger, 1 tsp garam masala, 1 tsp kasuri methi, and fresh coriander. Use the same pan (or a separate one) to toast the pav buns with butter and fresh coriander before serving with the hot soya mixture.
