Beef Korma Recipe
Step 1: Prepare the Beef
Take 1.5 kg of beef, wash it, and drain the water thoroughly. Use solid pieces along with some fat and bones for better flavor.
Step 2: Marinate the Beef
Mix the beef with 0.5 tsp salt, 0.5 tbsp ginger paste, 0.5 tbsp garlic paste, and 1 cup of pre-boiled milk. Let it marinate for about 1 hour.
Step 3: Make the Special Spice Paste
In a bowl, take 0.5 cup chopped onions, about 18-20 pieces, along with cashew nuts and raisins. Add some water and blend to make a paste.
Step 4: Fry Onions
In a pan, heat a bit more than 1 cup of soybean oil. Add 2 cups of finely chopped onions for frying. Stir occasionally until they turn light brown.
Step 5: Add Whole Spices
Once the onions are golden, add 2 tbsp ghee, 4 pieces of cinnamon, several green cardamom, 2 bay leaves, 4 cloves, and 1/2 piece of nutmeg. Crush the nutmeg as finely as possible.
Step 6: Add More Onions and Spices
Add 2 more chopped onions (not browned), 0.5 tbsp garlic paste, and 0.5 tbsp ginger paste to the pan. Stir to remove the raw smell.
Step 7: Incorporate Ground Spices
Add 1 tsp coriander powder and slightly less than 1 tsp cumin powder. Stir and cook the spices well.
Step 8: Add the Spice Paste
Add the spice paste you made earlier to the pan. Cook thoroughly until the oil separates from the mixture.
Step 9: Add Marinated Beef
Once the oil separates, add the marinated beef and mix well. Cover the pan and let it cook for about 15 minutes.
Step 10: Add Liquid
After 15 minutes, the beef should be 80% cooked. Add 1 cup of liquid milk and cover the pan again. Let it cook on low heat for another 15 minutes.
Step 11: Final Touches
Add whole green chilies and half of the fried onions. Mix well and cover the pan for about 10 minutes.
Step 12: Serve
After 10 minutes, uncover the pan. The korma should be ready. Add the remaining fried onions, 1 tsp ghee, and 2 tsp sugar. Let it sit on low heat for 3 more minutes before serving.
