Beef with Leeks

Step 1: Sear the beef

Season the beef chunks with salt and pepper. Heat olive oil in a heavy-bottomed pot and sear the meat on all sides until browned. Remove and set aside.

Step 2: Create the base

Add the chopped shallots and garlic to the same pot. Deglaze with wine and stir well, scraping the bottom of the pot. Season with salt, pepper, and bay leaves.

Step 3: Braise

Return the beef to the pot, cover, and cook until tender.

Step 4: Add leeks

Cut the leeks into large, thick chunks. Place them in the pot with the beef. Add fresh thyme, cover again, and continue cooking until the leeks are soft and flavorful.
