Instructions

  1. Prep: Preheat the oven to 350°F. Lightly grease a 12” cast iron or oven-safe skillet with butter.
  2. Brown the Butter: Melt the 1 cup salted butter in a saucepan over medium-high heat. Allow it to brown for about 5 minutes. Remove from heat and pour immediately into a large mixing bowl. Let it cool slightly.
  3. Mix Dry Ingredients: In a separate medium bowl, whisk together the 2 3/4 cups all-purpose flour, 1 tsp baking soda, 1/4 tsp baking powder, and 1/4 tsp salt.
  4. Combine Wet Ingredients: Once the brown butter has cooled, whisk in the 2 tbsp avocado oil, 1 cup brown sugar, and 1/2 cup granulated sugar. Add the 2 eggs and whisk until well combined and lighter in color. Stir in the 2 tbsp heavy cream and 2 tsp Amoretti Vanilla Bean Paste.
  5. Create Dough: Gradually add the dry ingredients to the wet, folding until just combined. Fold in the 3/4 cup semi-sweet chocolate chips, 3/4 cup chopped milk chocolate, and 4 sheets of crushed graham crackers.
  6. Assemble: Press half of the cookie dough into the prepared skillet. Arrange some of the broken graham cracker pieces and some marshmallows on top. Scoop the remaining dough on top and spread evenly. Press the final marshmallows and graham cracker pieces on top.
  7. Bake: Bake at 350°F for 22-27 minutes, or until the edges are golden brown and the center is set yet slightly gooey.
  8. Serve: Cool for at least 10 minutes. Serve warm topped with a scoop of vanilla bean ice cream and a sprinkle of flaky sea salt.
