Beef Stir Fry Instructions
Step 1: Prepare and Velvet the Beef
- Cut the beef into thin slices against the grain.
- Place the beef slices in a bowl and mix with a small amount of baking soda to tenderize (a process known as velveting).
- Let it sit for 20 minutes, then rinse thoroughly under cold water and drain well.
Step 2: Prepare Vegetables
- Slice the bok choy stems and leaves, carrot, capsicum (bell pepper), green onion, garlic, and onion into thin, uniform pieces.
Step 3: Mix the Sauce
- In a bowl, combine soy sauce, oyster sauce, Chinese cooking wine, sesame oil, sugar, and pepper. Mix well.
- Take a few tablespoons of this mixture and combine with the drained beef. Let it marinate briefly.
- Add cornflour/cornstarch and a splash of water to the remaining sauce mixture to thicken it later.
Step 4: Stir Fry
- Heat peanut oil in a wok.
- Add the garlic and onion and cook until fragrant.
- Add the marinated beef and sear until browned.
- Add the prepared vegetables (except the green leaves/onions) and toss to combine.
- Pour the sauce mixture over the ingredients and stir fry until the sauce thickens and coats everything evenly.
- Add the green parts of the bok choy and green onions at the end and toss briefly until wilted.
- Serve hot over rice and garnish with sesame seeds.
