Cooking steps

Baked Zucchini Rings with Creamy Dipping Sauce

Step 1: Prep the Zucchini [00:02]

Slice the zucchinis into rounds and use a circular cutter to remove the centers. Save the centers for the dipping sauce.

Step 2: Bread the Rings [00:06]

Place the zucchini rings in a bowl. Add cornstarch, grated parmesan, breadcrumbs, and your choice of spices. Toss well until they are evenly coated.

Step 3: Bake [00:11]

Arrange the breaded rings on a baking sheet lined with parchment paper and bake until golden and crispy.

Step 4: Make the Dipping Sauce [00:13]

Sauté the zucchini centers you saved earlier in a pan until browned. Add them to a food processor along with sour cream (or yogurt), one clove of garlic, fresh parsley, and spices. Pulse until smooth.

Step 5: Serve [00:22]

Serve the crispy baked zucchini rings warm with the creamy dipping sauce.
