Pasos

Preparation

Step 1: Prepare the wings [00:25]

Clean the wings with water and pat them dry thoroughly. It's crucial they are dry before adding the marinade.

Step 2: Marinate [00:36]

In a large bowl, combine the party wings with salt, sugar, garlic powder, onion powder, white pepper powder, soy sauce, rice wine, beaten egg, and 10 cloves of sliced garlic. Mix thoroughly, cover with plastic wrap, and marinate for at least 6 hours or overnight.

Step 3: Prepare the batter [01:21]

In a small bowl, whisk together the all-purpose flour, corn starch, and potato starch.

Step 4: Add the batter [01:33]

Add the dry batter mixture to the marinated wings. Mix well until all wings are evenly coated.

Cooking

Step 5: First fry [02:02]

Heat oil to 380°F (195°C). Carefully add the wings one by one, making sure to remove any pieces of garlic that stick to the wings. Fry for 5 minutes. Do not disturb the wings for the first minute of cooking. After 5 minutes, remove the wings from the oil and let them rest for 15 minutes.

Step 6: Second fry [03:22]

Heat the oil back to 380°F (195°C). Return the wings to the oil and fry for 3 minutes to achieve a crispier texture. Turn occasionally for even browning, then remove from the oil and serve.
