Perfect Homemade French Fries

Step 1: Prepare the potatoes [00:03]

  • Peel and cut the potatoes into fry shapes. Using a fry cutter is optional but helpful.

Step 2: Rinse and boil [00:10]

  • Rinse the cut potatoes under cold water until the water runs clear.
  • Place them in a pot and cover with water, add a splash of vinegar and a sprinkle of salt. Bring to a boil.
  • Once boiling, cook for about 10 minutes until tender but still holding their shape.

Step 3: Cool and freeze [00:21]

  • Carefully transfer the cooked potatoes to a wire rack on a baking sheet and arrange in a single layer.
  • Once cooled, freeze for an hour or preferably overnight until they sound hard.

Step 4: First fry [00:30]

  • Heat the frying oil to 400°F.
  • Fry the potatoes in batches for just 1 minute. Set them aside.

Step 5: Final fry [00:41]

  • Let the oil heat back up to 400°F.
  • Fry the potatoes a second time until they are golden brown and crispy.
  • Toss immediately with salt while they are still hot and serve with your favorite dipping sauce.
