Steps to Shuck Oysters

1. Preparation [00:04]

  • Give the 100 oysters a quick rinse under cold water.
  • Scrub the shells clean if desired.

2. Set Up [00:08]

  • Roll up a kitchen towel and place your thumb underneath it to protect your hand while opening the oyster.

3. Shucking [00:15]

  • Place the oyster knife into the hinge of the oyster.
  • Wiggle the knife back and forth until you feel some give.
  • Once the knife is wedged in, twist it to pop open the shell.
  • Wipe the blade off to ensure no shell fragments enter the oyster meat.

4. Cleaning and Finishing [00:24]

  • Re-insert the knife and scrape along the top inside to detach the top shell completely.
  • Clean off any extra bits of shell.
  • Locate the white muscle connecting the oyster meat to the shell and scrape it off to release the oyster.
  • Serve immediately over a bed of ice.
