Instructions
- Sauté the aromatics: In a large pot, heat 1 tbsp of oil from a sun-dried tomato jar over medium heat. Add 1/2 chopped onion and 1 tbsp minced garlic, cooking until softened.
- Make the base: Stir in 3 tbsp tomato paste and cook briefly to develop the flavor. Pour in 6 cups of chicken broth and 1 cup of heavy cream.
- Season and simmer: Season the liquid with basil, garlic powder, Italian seasoning, and salt to taste.
- Add pasta and chicken: Add the medium shell pasta and shredded chicken to the pot. Let it simmer until the pasta is cooked through.
