Crispy Chili Potato Recipe
Step 1: Prepare Potatoes
- Take 4 raw potatoes, trim the sides, and cut them into medium thickness strips.
- Soak the strips in water to remove excess starch.
Step 2: Season Potatoes
- Drain the water and add salt to taste.
- Add 1 tsp ginger garlic paste, 1 tsp Kashmiri red chili, and 1/4 tsp black pepper powder.
- Mix in 3 tbsp corn flour and 3 tbsp all-purpose flour to coat the potatoes.
Step 3: Fry the Potatoes
- Heat oil in a pan on low to medium flame.
- Drop the potato strips individually into the oil and fry until firm.
- First fry on high flame, then lower to medium flame for cooking.
- Remove and place on a strainer to drain excess oil.
Step 4: Double Fry for Crispiness
- Let the fries cool down, then fry again in hot oil until super crispy.
Step 5: Prepare Chili Sauce
- In a new pan, heat 2 tbsp oil and add 1 chopped onion, 1/4 cup chopped garlic, and 1 inch chopped ginger.
- Sauté on high flame until slightly crunchy.
