Chicken Biryani Recipe
Step 1: Marinate the Chicken
- Take cleaned chicken and marinate it with salt, turmeric powder, black pepper powder, and chili powder. Let it rest for 30 minutes.
Step 2: Prepare the Garnish
- Fry cashews and raisins in ghee until golden brown and set aside.
- Fry chopped onions in ghee until they are golden brown and set aside for later use.
Step 3: Prepare the Spice Mix
- In a pot, add 2 tablespoons of ghee, followed by 2 chopped tomatoes and 4 slit green chilies. Sauté well.
- Add 2 tablespoons of ginger-garlic paste and cook until the raw smell disappears.
Step 4: Cook the Chicken
- Add the marinated chicken to the spice mix along with 1 cup of hot water and some mint leaves. Cook for about 5 minutes until the chicken is tender but not overcooked.
Step 5: Add Spices
- Add half a teaspoon of curry leaves, 1 teaspoon of chili powder, 1 teaspoon of black pepper powder, and garam masala. Mix well and cook for a few more minutes.
Step 6: Prepare the Rice
- In another pot, heat 2 tablespoons of ghee and add half of the fried onions, along with cardamom and cloves. Sauté for a minute.
- Add washed Basmati rice and fry for about 5 minutes.
- Pour in 1.5 cups of boiling water and add salt to taste. Cook until the rice is almost done.
Step 7: Layer the Biryani
- Take 2 tablespoons of the chicken masala and mix it with the rice for flavor.
- Layer half of the rice in a pot, followed by the fried onions, mint leaves, and coriander leaves. Add the remaining rice on top.

- Drizzle some saffron milk and rose water over the top, cover with aluminum foil, and let it cook on low heat for 5 minutes.
