Step 1: Cook the Rice
- Rinse 300g of brown rice in cold water until it runs clear.
- Add the rice to a saucepan with 600ml of cold water and a pinch of salt.
- Bring to a boil, then cover and reduce heat to low, simmering for 25-28 minutes.
- Once cooked, let it rest for 4 minutes with the lid on before fluffing with a fork.
Step 2: Cook the Beef
- Spray a large pan with oil and place over high heat.
- Add 1kg of lean beef mince and break it apart with a spatula.
- Season with 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, salt, and black pepper.
- Cook for 8-10 minutes, allowing the beef to brown, then remove from heat.
Step 3: Prepare the Sauce
- In a bowl, combine 150g of low-fat mayonnaise, 100g of Greek yogurt, 1.5 tablespoons of tomato ketchup, 1 tablespoon of yellow mustard, 3 teaspoons of pickle brine, 1 teaspoon of smoked paprika, salt, and pepper.
- Add 2 slices of finely chopped dill pickles and mix until smooth and creamy.
Step 4: Prepare the Toppings
- Shred 300g of lettuce and wash thoroughly.
- Finely dice 0.5 of a red or white onion.
- Slice 200g of cherry tomatoes.
Step 5: Assembly
- Divide the cooked rice into five 750ml containers.
- Add an equal portion of the cooked beef on top of the rice.
- Drizzle the sauce over the beef.
- Sprinkle with the diced onion and remaining pickles.
- Serve the fresh vegetables separately to keep them crisp.
