Cooking steps

Dirty French Fries

Step 1: Prep and Soak [00:07]

Peel the russet potatoes and cut them into strips of 1/4 to 1/2 inch in thickness. Place the cut potatoes into a bowl of ice-cold water and let them rest for 1 hour. Replace the water halfway through.

Step 2: Prepare Batter [00:21]

In a bowl, mix 1/2 cup of all-purpose flour, 1/4 cup of cornstarch, paprika, garlic powder, baking powder, a little bit of MSG, salt, and black pepper. In a separate bowl, add 1/2 cup of water and 2 or 3 tablespoons of the dry mixture to create a thin batter.

Step 3: Coat [00:48]

Drain the potatoes and dry them well using paper towels. Dip the potato strips into the dry mix, then into the wet batter, and back into the dry mix to ensure a double-layer of crispy coating.

Step 4: Fry [01:11]

Deep fry the potatoes at 325 degrees Fahrenheit for 4 to 5 minutes to initially cook them. Remove from the oil. Increase the oil temperature to 375 degrees Fahrenheit and fry the potatoes again for 1 to 2 minutes for a final, crispy finish.

Step 5: Season [01:36]

Transfer the fries into a bowl and coat them with Cajun seasoning.
