Cooking steps

Homemade Breakfast Sausage and Sandwiches

Preparing the Sausage [01:03]

  1. Preheat oven to 400°F.
  2. In a large mixing bowl, add 1 lb of ground pork and 1 lb of ground turkey thigh.
  3. Season with 1 tsp dried garlic, 1 tsp dried onion, 1 tsp paprika, some ground black pepper, 3 tsp sea salt, 2 tbsp fresh chopped parsley, and 3 tbsp pure maple syrup.
  4. Mix thoroughly with your hands until uniform.

Forming and Baking [02:30]

  1. Line a baking sheet with parchment paper.
  2. Use a measuring scoop to portion about 6 tbsp of the mixture per patty.
  3. Roll each scoop into a ball, then press into a patty, making them slightly larger than the English muffins as they will shrink while baking.
  4. Bake at 400°F for 18–22 minutes, until the internal temperature reaches 165°F.

Preparing the Sandwiches [04:01]

  1. Toast English muffins on a griddle with butter.
  2. Fry the eggs in a pan with butter until over-medium. Season with salt and pepper.
  3. Mash the avocado in a bowl with a pinch of salt, pepper, and a touch of lemon juice to prevent browning.
  4. Assemble: Spread mayo on the English muffin, add mashed avocado, a sausage patty, a fried egg, a slice of cheese, and cover with the other half of the muffin.
