Cooking steps
Cooking Instructions
1. Preparation
- Prepare the onions: trim, peel, slice thinly, and dice into small pieces.
- Prepare the bell peppers: slice around the core, remove seeds and pith, and dice into small pieces.
- Prepare the garlic: crush with the side of a knife and mince finely.
- Prepare the garnish: roughly chop some flat-leaf parsley.
- Grate the mozzarella cheese.
2. Cook the Pasta
- Bring a large pot of water to a boil and add salt.
- Cook the pasta for 2 minutes less than the package instructions.
- Before draining, reserve about 1 cup of the cooking water.
3. Sauté the Vegetables
- Heat a large, high-rimmed pan over medium-high heat with olive oil spray.
- Sauté the diced onions and peppers with salt and black pepper for 5–6 minutes.
- Add the minced garlic and cook for 30 seconds until fragrant.
4. Cook the Meat
- Add the beef mince to the pan. Season with salt, black pepper, smoked paprika, and chilli flakes.
- Cook for 6–8 minutes, stirring frequently, until the meat is browned and any moisture has evaporated.
5. Create the Creamy Sauce
- Reduce the heat to the lowest setting. Add the cream cheese, gently breaking and folding it into the meat mixture.
- Incorporate the pasta water as needed to achieve a creamy, saucy texture.
- Add the grated mozzarella and the cheese slices, folding until completely melted.
6. Combine
- Add the drained pasta to the pan. Toss everything together, adding a little more pasta water if necessary to adjust the consistency.
7. Serving & Storage
- Divide equally into five meal prep containers (approximately 750ml capacity).
- Garnish with the reserved chopped parsley. Let cool for 15–20 minutes before covering with lids.
