Quiche de Alho-Poró Recipe
Step 1: Prepare the Dough
In a bowl, combine 200g of wheat flour, a pinch of salt, and one egg yolk. Add 100g of margarine and mix all the ingredients together.
Step 2: Add Cold Water
Gradually add 40ml of cold water while kneading the dough until it becomes firm.
Step 3: Shape the Dough
Place the dough in a 25cm removable-bottom tart pan. Press it down evenly and make holes with a fork to prevent it from puffing up during baking.
Step 4: Pre-bake the Dough
Pre-bake the dough in the oven for 10 minutes.
Step 5: Prepare the Filling
In a pan, heat about 2 tablespoons of olive oil. Add the chopped onion and sauté until translucent.
Step 6: Add Leeks
Add the chopped leeks to the pan and sauté until softened. Optionally, add calabrian pepper.
Step 7: Cool the Filling
Remove the filling from heat and let it cool.
Step 8: Mix the Filling Ingredients
In a bowl, whisk together 4 eggs, 1 box of cream, and 100g of parmesan cheese. Add 1 tablespoon of creamy requeijão and mix well.
Step 9: Combine with Leeks
Once the leek mixture has cooled, add it to the egg mixture and stir to combine.
Step 10: Fill the Pre-baked Dough
Pour the filling into the pre-baked dough, even if the dough is slightly puffed.
Step 11: Bake the Quiche
Bake in a preheated oven at 180 degrees Celsius for 30 to 40 minutes.
Step 12: Serve
Once baked, remove from the oven, let it cool slightly, and then slice to serve. Enjoy your delicious Quiche de Alho-Poró!
