Cooking steps
Restaurant Style Egg Fried Rice
Step 1: Prepare the Rice [00:30-02:50]
- Wash and drain 1 cup Basmati rice.
- Soak it in 2 cups of water for 30 minutes.
- Boil 4 cups (1 litre) water in a pot.
- Add soaked rice to boiling water, keep flame high until rolling boil, then reduce to medium.
- Add 1½ teaspoons salt and 1 tablespoon refined oil.
- Cook rice until about 75%-80% done (rice still firm and not fully cooked).
- Drain rice immediately to stop cooking; do not leave in hot water or strainer for more than 2 minutes.
- Spread rice on plates to cool, then refrigerate for at least 2 hours or preferably overnight.
Step 2: Prepare the Eggs [02:55-03:27]
- Heat 1 tablespoon refined oil in a wok/kadai.
- Add 3 eggs, a pinch of salt, and ¼ teaspoon pepper.
- Scramble the eggs lightly and set aside.
Step 3: Stir-Fry Vegetables [03:32-04:39]
- In the same wok, heat 3 tablespoons refined oil on high flame.
- Add 2 teaspoons finely chopped garlic and sauté slightly.
- Add ¼ cup white portion of spring onion, ¼ cup chopped carrots, ¼ cup chopped beans, 2 tablespoons chopped capsicum (optional), and ¼ cup chopped cabbage.
- Stir fry the vegetables for about 1 minute on high heat; do not overcook.
Step 4: Combine Eggs and Vegetables [04:44-04:50]
- Add scrambled eggs back into the wok with vegetables.
- Mix well.
Step 5: Add Sauces and Seasonings [05:04-05:14]
- Turn flame to low.
- Add 2 teaspoons light soy sauce, 2 teaspoons chili-garlic or chili sauce, and ½ teaspoon sugar.
- Mix thoroughly.
Step 6: Add Rice and Final Seasoning [05:24-06:42]
- Add the prepared basmati rice to the wok.
- Add ½ teaspoon crushed black or white pepper.
- Add ¼ cup chopped spring onion greens.
- Increase flame to maximum and mix gently but thoroughly, folding to avoid breaking rice grains.
- Adjust salt if necessary, considering soy sauce may add saltiness.
Step 7: Serve [07:13-07:20]
- Serve hot immediately.
- Avoid covering the fried rice to prevent moisture buildup and loss of flavor.
