Cooking steps

Step 1: Prepare the chicken [00:20]

  1. Poke the chicken pieces with the tip of a knife to help it absorb the marinade.
  2. Cut and spread out the thicker parts of the chicken to ensure even cooking.
  3. Lightly poke the chicken on both sides.

Step 2: Marinate [00:51]

  1. Mix 4 tbsp mirin, 4 tbsp sake, and 4 tbsp soy sauce in a bowl.
  2. Add the chicken to the bowl and let it marinate for at least 20 minutes (ideally 1 hour).

Step 3: Cook the chicken [01:27]

  1. Heat some oil in a pan over medium heat.
  2. Place the chicken pieces in the pan. Pan-fry until the bottom is golden brown, then flip.
  3. Cover the pan with a lid, turn the heat to low, and cook for 3 to 4 minutes.
  4. Remove the lid and turn the heat back to medium. Cook until the juices start to caramelize and the chicken develops a golden brown color on both sides.
  5. Remove the chicken from the pan and let it rest for 3 to 5 minutes before cutting.

Step 4: Make the sauce [03:13]

  1. Wipe the pan clean and add the marinade used earlier.
  2. Bring to a boil over medium heat.
  3. Add 1 tsp of brown sugar to the sauce.
  4. Simmer, stirring occasionally, until the sauce reaches a thicker consistency.

Step 5: Serve [03:48]

  1. Cut the cooked chicken into strips.
  2. Drizzle with the prepared teriyaki sauce.
